Dog biscuits taken off bistro menu


Health inspectors fail to see humor

        FORT THOMAS — Free dog biscuits with all leftovers.

        Chef John Frey thought it would be cute, a new twist on the doggie bag. He had no idea the health department would soon be barking at his door.

        The operator of Bauer's Bistro got a recipe off the Internet, tinkered with it and began sticking the biscuits in with take-home leftovers. Customers thought it was funny.

        The dogs, Mr. Frey suspects, thought it was great.

        But the Northern Kentucky Independent District Health Department put a stop to the duck fat concoc tions. The reason is simple, explained Tom Lockhart of the health department's environmental health services division: The biscuits were a different product than what the restaurant is licensed to sell.

        His analogy is more colorful: “You don't want somebody, say, slaughtering hogs in the kitchen where they're making your dinner. That's why there are permits.”

        Even Mr. Frey agreed he wouldn't want that.

        He just didn't think of his biscuits as anything like hog slaughtering. “I just thought it was a unique thing,” he said.

        He could seek the proper permit, but says he probably won't. “How much money would that cost, just to give something away?”
