Mesclun (MES-klun) is not a type of green but the name for a mixture of salad greens. Having originated near Nice, France, mesclun comes from the Provencal term for “mixture.” Usually made with strong-flavored greens, such as arugula and mizuna, and mild baby lettuces, mesclun (sometimes labelled “spring greens”) is sold in bulk at many grocery stores. When buying, look for fresh, non-wilted greens. Wash and dry mesclun just before serving — and use within a day or two of purchase. Toss lightly with vinaigrette and top with crumbled goat cheese and toasted pine nuts.
