Kraut fest up to sniff

        WAYNESVILLE — Much-maligned sauerkraut gets the star treatment this weekend. During Waynesville's annual Sauerkraut Festival, cabbage sprouts in dishes of all kinds, from pizza to doughnuts to fudge. There's even a cabbage beauty contest Saturday morning.

        On Friday, almost everyone in Waynesville was chopping, seasoning and stirring.

        “We've got 5,500 pounds of potatoes sitting in the kitchen right now,“ said Larry Stiles.

        Mr. Stiles is coordinator of the German Sundae project for the Wayne Township Sons of the American Legion.

        The potatoes, sliced and cooked with butter and onion, form the basis for this delicacy.“After they're cooked, we chop 'em up and top 'em with sauerkraut, sour cream, cheddar cheese, bacon bits and an olive,” Mr. Stiles said.

        A total of 65 cases of No.10 cans of sauerkraut will adorn close to 10,000 German Sundaes.

        Not everything contains cabbage. Volunteers from Wayne Middle School will transform 60 bushels of Cortland apples into kraut-free Apple Flappings.

        “This is a Dutch pastry,” explained school principal Mike Doyle. “The apples are cored and sliced into rings. They are dipped into a batter and then deep fried.”

        About 400 craft vendors will fill the festival area,
       but the food booths are the province of local organizations, school and church groups. Proceeds are an essential part of their budgets.
