Add depth to your holiday mashed potatoes with a grating of celeriac or celery root. The knobby, brown vegetable is cultivated for its root, which tastes like a cross between celery and parsley. Buy relatively small, firm roots with no soft spots. Peel and cook slowly into purees, soups or stews. A classic French bistro salad is grated raw celeriac tossed with remoulade.

Reissdorf Kolsch ($3/pint): The authentic German ale I raved about in kegs is available in bottles. Just as good as the draft version deep golden, sweetly malty up front, with mild hop aroma, low carbonation and low bitterness. Extremely drinkable. German ales are special, and this is one of the best.
