        Pattypan squash is a small, round, yellow or green summer squash with scalloped edges, which is why it is sometimes called “scalloped” squash. Slice and saute pattypans, steam or roast them whole, or hollow and stuff for baking. No need to remove the tender skin. Choose pattypans with bright-colored skin and no bruises. Refrigerate in a plastic bag no longer than five days.
