Edamame (eh-dah-MAH-meh) is the Japanese name for fresh soybeans, often sold in the pod in health and natural food stores. Steam or boil them and shell the beans for snacks or soups. Soybeans are pureed, soaked and cooked down to milk, which then is curded into tofu. Edamame are among the most nutritious plant foods, rich in protein, vitamins and minerals.
