This week, we have an unusual vegetable dish for you to try. Broccoli Chardonnay consists of cut broccoli mixed with pearl onions and covered with a rich white sauce flavored with white wine. It's an interesting combination and easy to make. Each serving contains 7 grams of fat.
For this rehab, we:
Reduced the amount of margarine in the white sauce from 2 tablespoons to 2 teaspoons.
Used 1 percent milk and reduced the amount by 1 tablespoon.
Used Philadelphia 1/3 Less Fat Cream Cheese.
Our results were remarkable. The rehab lacked the high-fat "shine" of the original, but the flavor was excellent. Reduced to only 3 grams of fat per serving, this recipe is an excellent way to tempt the most finicky to eat veggies.
Tip of the week: When making a low-fat white sauce, a wire whisk is essential to produce a creamy texture.
Broccoli Chardonnay
20 ounces frozen cut broccoli
2 cups frozen pearl onions
2 teaspoons margarine
2 tablespoons flour
1 teaspoon salt
Dash black pepper
1/2 cup + 3 tablespoons 1 percent milk
3 ounces light cream cheese
1/3 cup dry white wine
Preheat oven to 350 degrees. In 2-quart casserole dish, combine broccoli and onions. Cover; microwave on high until tender-crisp.
In small saucepan, melt margarine over medium heat. Whisk in flour, salt and pepper. Slowly whisk in milk until smooth. Continue to cook, stirring until bubbly and thickened. Blend in cream cheese until smooth. Remove from heat; add wine. Pour over broccoli mixture. Bake, uncovered, for 30 minutes at 350 degrees. Makes 8 servings.
