Fuller's IPA ($10 six-pack): If you're only familiar with American versions of India pale ale, you might think of them as merely attempts to set new records for most hops in a bottle. Try this one, from England, where they invented the style, and you'll learn why IPAs became popular in the first place. Superbly balanced, with both hop and malt flavors, it's clearly an IPA, but with all the subtlety of a fine English ale. Well worth the price, but I insist you serve it no colder than 55 degrees. You're cheating yourself otherwise.

Crema is the Hispanic version of sour cream. CrËma varieties include crema Mexicana (thick, rich and tangy, similar to crËme fraiche), crema Centroamericano (thicker and sweeter), crema media (like whipping cream) crema Mexicana agria (thick and more acidic) and crema Salvadorena (like sour cream).
