Congratulations to Stephen Casey of Spring Valley, Ohio, who was named a finalist in the National Middle School Healthy Heritage Recipe Contest, sponsored by Johnson & Wales University. Stephen, who is a student at Bellbrook Junior High School in Spring Valley, near Waynesville, placed as a finalist for his recipe, "Sweet Potatoes and Baked, Spiced Apples."

Market Scan

Morel mushrooms belong to the same fungus species as the precious truffle, and are savored for their smoky, nutty and earthy flavor. Fresh morels are generally available April through June in many parts of the country. Usually, the darker the morel the more intense the flavor. Look for morels with firm yet spongy texture. Refrigerate the mushrooms in a paper bag, but use as soon as possible. Soak briefly, just before using, to remove dirt and any hidden insects. The marvelous flavor of morels need little embellishment. Cook and serve them simply.

Sip It

Two Hearted Ale ($9/six pack): If you love really huge hop flavor, you owe it to yourself to seek this hophead's delight from Michigan's Kalamazoo Brewing Co. A dry-hopped, dark golden IPA, with a big head, pleasing aroma, and a blast of hops that will clear your sinuses. Available now at several Tristate locations.
