Also called mirliton and vegetable pear, chayote (chi-YOH-tay) is a summer squash that looks like a wrinkled green pear and is milder than zucchini. Cook chayote before eating (and cook longer than other summer squash). Peel before cooking, but don't remove the tasty seed. Cooked chayote is an excellent low-fat substitute for avocado.
