Bryan Madison and his family now offer a taste of their sweet, briary blackberries in a jar. Grown in Adams County, the berries are cooked down into dark, thick jam, ready for spreading on toast and biscuits or spooned over cream cheese for dipping. What Is This?

Mascarpone (mas-car-POH-nay) is a velvety soft cheese, slightly tart and a key ingredient in tiramisu. Although Italian in origin, it's name may be derived from the Spanish mas que bueno, or "better than good." Mascarpone is highly perishable, so use it soon after you buy it. Quick substitute: Blend 8 ounces cream cheese with 1/4 cup whipping cream.

Cool Stuff on the George Foreman Grill

Mix marinade of 4 tablespoons

balsamic vinegar; 4 tablespoons olive oil; 21/2 tablespoons chopped, fresh rosemary; and 11/2 tablespoons minced garlic in shallow dish. Season 4 boneless loin pork chops to taste with salt and pepper and place in marinade. Cover at room temperature no longer than 2 hours. Remove chops from marinade and grill about 8 to 10 minutes.
