What Is This?

Unlike American bacon, the Italian pancetta (pan-SHE-tuh) is cured but not smoked. Use pancetta in pasta sauces and on pizza.

If you can't find it, substitute an equal amount of prosciutto (Italian-style ham) or blanch American bacon a few minutes in boiling water to remove its smoky flavor.
