Grilling in a packet



Foil-packet meals, which combine the freshness of steaming with the caramelized flavors of grilling, take about 20 minutes. Those crunched for time can assemble packets in the morning and throw them on the grill at night.

Shrimp, Corn and Zucchini Packets

3 tablespoons olive oil

1 teaspoon minced garlic

1 teaspoon dried thyme

1 teaspoon salt

2 medium zucchini, cut into 2-inch chunks

4 ears corn, cut into 1-inch pieces

1 pound shrimp, peeled and deveined

4 pieces (14-by-18 inches each) heavy-duty foil

8 thin slices lemon

Combine oil, garlic, thyme and salt. Add zucchini, corn and shrimp; toss. Divide mixture and place on foil sheets. Top with lemon slices. Fold top and ends and seal tightly, leaving room for heat circulation. Preheat grill to high and grill for 15 minutes. Remove packets from grill and let stand 5 minutes before opening. Makes 4 servings.
